They were afraid to make a change, he says. But then they saw that change could be good. He also discovered that the U.S. government, which requires schools to follow many rules when they prepare and serve meals, did not have rules for family-style meals. Rules needed to be made before Eatiquette could move forward. Mr. Vetri and his foundation helped government officials develop the new rules. Mr. Vetri says his foundation is trying to grow its Eatiquette program. It was in nine schools in 2013. He wants to set up programs in as many schools as possible. When he can carve out time from overseeing his busy restaurants, he visits Eatiquette schools.
