The breakfast cakes have only 10 ingredients, including fruit and whole grains, and no preservatives, Mr. Stein says. “Our mission is to create healthy deliciousness in our schools,” he says. The students who work at Rebel Ventures meet three to four days a week after school to develop business plans and test new recipes. They tried adding sweet potatoes and carrots to Crumbles, but that didn’t work well. “We kind of embrace our failures,” Mr. Stein says. “As long as you learn from them, how else are you going to learn and improve?” He and his students now are working on developing a healthy fruit drink and healthy chili for schools. Dealing with cancer as a teenager shaped Mr. Stein.
